Honey is a highly complex saturated solution of sugars, of which about 75% is sugar and about 25% is water. It is reported in the literature that some yeasts with suitable high osmotic pressure in honey can convert glucose into polyhydroxy compounds, such as glycerol, D-arabitol and erythritol. There is a certain relationship between the content of glycerol in honey and the number of microorganisms present in honey.
